Ribeye steaks and New York Strip steaks are bone-in steaks. Bones don’t just insulate your beef when cooking, they actually add flavor as well. As the marrow cooks out of the bone, it leaves you with a juicy, tasty flavor-filled cut of beef.

Center-cut Sirloin steaks are called Sirloin Filets and are 8 oz steaks cut from the center of the Top Sirloin.

The Filet Mignon steaks range from 5 oz to 8 oz.
